Denn wo sonst fühlt sich das Leben eines Reisenden leichter an als auf einer Liege mit Blick auf sanft heranrollende Meereswogen während man cocktailschlürfend auf den Sonnenuntergang wartet. In so einem Flashpacking-Leben bekommt man so einige Beachclubs zu Gesicht. Doch da gibt es einen, der besondere Beachtung verdient: Ku De Ta. Interview mit Philip Davenport, Chef Ku De Ta

Der Kopf hinter soviel kulinarischer Perfektion heißt Phil Davenport. Der Neuseeländer ist der heimliche Star des Ku De Ta, krönt er doch einen der schönsten Beachspots auf Bali mit einem köstlichen Crossover aus mediterranen, marokkanischen und asiatischen Einflüssen. Im exklusiven FYT-Interview verrät er sein persönliches Pizza-Geheimnis, welchen Cocktail er zum Sonnenuntergang am liebsten trinkt und warum seine Kreationen auch die Seele nähren.

What’s the best thing to order while sitting comfortably on a lounge sofa at Ku De Ta and waiting for sunset? 

We have so much to offer when waiting for that sun to come down and treat us to the magical sunsets on earth. Our in house made to order sushi is always a winner, but the 10 gourmet pizzas are what I would recommend as you were sipping on a nice cocktail, as they are perfect for groups, couples or families. The prawn, lamb or pepperoni ones are the best.

I love the Cocktail-Menu. Which Cocktail would the chef order himself for sunset?

I am classic kind of a guy and I am very fond of 3 cocktails that are classics or takes on the classics. The kdt negroni is such a great starting drink or aperitif, sharp & dry and matches the sunset. The good old Moscow mule is for those not too sweet not too dry days. If you want to take it up a level and like refined rum drinks, that would have to be the treacle.

How come the pizzas are different but as delicious as in the country of origin, Italy? What’s the secret? 

Italian pizza is quite simple and based around 4 or less ingredients, they are baked with all the ingredients and are what they are. Kudeta’s pizzas are different because we bake them with minimal ingredients and then when they come out of the oven we top with herbs, hams, mozzarella, parmesan etc. This gives a fresher, more rounded pizza. We also make our crusts very thin which makes the pizzas distinctive.

The dishes served at Ku De TA are healthy and delicious. What about the soul? 

Food is life and you have to be happy looking at and eating what we serve. Also, you have to be happy with the people you’re eating with. You’re not going to go to a mediocre restaurant with people you don’t like to eat ordinary food. The place has to have soul and you hope that the chef has a bit too.
